What does a Hashcat benchmark actually measure?

It measures how many guesses per second (the hashrate) a GPU can compute for one hashing algorithm, such as MD5, NTLM or bcrypt. A higher hashrate means a password audit or recovery job against that algorithm finishes faster on that hardware.

Why do some benchmarks list 8 or even 16 GPUs?

Those figures come from production cracking nodes, not a single desktop card. Online Hash Crack scales jobs across multi-GPU rigs, so the numbers reflect a full worker rather than one consumer graphics card.
